Quick Homemade Pasta



A quick homemade pasta after a long cold day is the shiz-nit, and you may quote me on that.

Homemade Egg Noodles

For the dough:
2 Eggs, lightly beaten
2 teaspoons Kosher salt, depending how salty you like it
splash olive oil
All-purpose flour (about 1-1.5 cup, enough to bring the dough into a solid, elastic ball)

Beat the egg with the oil and salt, then slowly add the flour in small increments until a solid dough comes together. Knead for 5-10 minutes until smooth and elastic. Refrigerate for one hour to let the dough rest.

After resting, roll the dough into a thin sheet, or feed through a pasta machine. Cut as desired (I did long, flat noodles since it's easy) and boil for about 3-4 minutes, or until al dente. Top with sauce, cheese, and meatballs.
