Ghetto Cake

The ghetto cake was the chocolate cake recipe from the America's Test Kitchen;s "Healthy Family Cookbook" and the vanilla cake recipe was from here, except I added around 4 tablespoons of vanilla (I really wanted a vanilla cake to be really freaken vanilla-y okay) and it was delicious. The vanilla cake came out way dense, but tasty. The chocolate cake was ...okay... nothing too great. The issue with the chocolate cake primarily (other than unremarkableness) was that it was in the pans too long and soaked up the canola-oil-meant-to-just-grease-the-pan, so it would not come out and the edges were kinda gross. Also, we ran out of icing from the can and the cake pans were all different sizes. I probably wouldn't make this again, but boy did it have moxie.
