America's Test Kitchen Wheat Sandwich Bread (transcribed from episode)

I was given this recipe as a transcribed version of the one they did on TV and it was terrible. The bread had a bad time rising and it the recipe made it so wet that I had to add atleast 3 extra cups of flour just to make it remotely in the ball park of kneadable. The resulting bread was not sandwich bread but rather a pretty dense, unappealingly crumbly, and flour-y tasting wheat bread. One loaf clearly did better than the other. It tasted kind of gross fresh, and a day later it tasted pretty gross toasted. A week later, the staleness seems to have made it a lot better of a consistency, but still not expected. Will not try again.
